The holidays are upon us. Time to get organized – shop, decorate, plan, entertain, cook and best of all, enjoy family and friends!
To help make your Thanksgiving dinner a little less stressful, I am sharing a recipe for Gravy that I have been using for years. For me, the gravy was always the hardest part of the meal. Trying to make enough gravy from the drippings was never easy. This recipe takes care of that and I promise you will not be disappointed. You can make it ahead and freeze it or refrigerate it. I will be making mine on Saturday and it makes my house smell so good.
The Greatest Gravy Ever!
Ingredients
4 Turkey Wings (about 3-4 lbs)
2 medium onions, peeled and quartered
1 Cup Water
8 Cups Chicken Broth
2 Medium Carrots, Cut in Chunks
2 Medium Ribs celery (with leaves), cut in chunks
4 Springs Fresh Thyme, or 1 tsp Dried
3/4 Cup All-Purpose Flour
2 TB stick butter
1 tsp Freshly Ground Pepper, or to taste
Directions
1. Heat oven to 400. Have ready a large roasting pan
2. Put wings in pan; add onions. Roast 1-1/4 hours or until wings are browned.
3. Put wings and onions in a 5-6 Qt. pot.
Add water to roasting pan and stir to scrape up any brown bits on bottom. Add to pot. Add 6 Cups broth (refrigerate remaining 2 Cups), the carrots, celery and thyme. Bring to a boil, reduce heat and simmer, uncovered, 1-1/2 hours.
4. Remove wings. When cool, pull off skin and meat. Save meat for another use.
5. Strain broth into a 3-qt. saucepan. Discard vegetables; skim off fat (or refrigerate overnight so that the fat that rises to the top can solidfy and be easily removed).
6. Whisk flour into remaining 2 cups broth until blended and smooth.
7. Bring broth in saucepan to a gentle boil. Whisk in flour mixture and boil 4-5 minutes to thicken. Stir in butter and papper. Serve or pour into containers and refrigerate up to 1 week or freeze up to 1 month.
Recipe Notes
Make up to 1 month ahead and freeze in airtight container; Thaw 2 days in fridge. Whisk often while reheating.
